Sugar Free Popsticles with Forest Fruits (Low-Fat, Low-Carb)

I am swallowed by fear when I remember last summer, namely the days in which my air conditioner was simply useless, the day in which I couldn’t use my oven and my only comfort were ice and ice cream. Of course, we all like summer when we stay by the pool or lay on the beach but our feelings change when we find ourselves trapped in a 300 meter office which only has one air conditioner.

Sometimes I think I’m too sensitive and dramatic, but when I feel I’m about to fall because of the heat while exercising, I realise that I am but being realistic. Bucharest may be the city of opportunities, but summer is absolutely painful to stay here and do not say that it is the only one in the world in this situation.

However, I try to see the full part of the glass, because I can’t change the climate, nor can I constantly be mad at the heat of the city. 😀
I decided I would make ice and ice cream supplies and I will share my recipes with you because I can not be the only one who feels the heat. This recipe is extremely simple and it doesn’t require an ice cream machine. All you have to do is buy some special moulds and start blending. Forest fruits can be replaced with other frozen fruits, but you will need to adjust the amount of erythritol with stevia.

  1. Thoroughly thaw the forest fruits before use. Put them in a bowl and blend them until you have an even fruit puree.
  2. Add the remaining ingredients and mix everything until the erythritol is dissolved. Add more sweetener if the fruits you use are very tart.
  3. Pour the mixture in 10 popsticles moulds and put them in the freezer. Keep them there for 6-8 hours or until they are completely frozen.
  4. You can take them out of the moulds before consumption or you can take them all out and cover your popsticles with clear film.
  5. Enjoy!
