Etape
  1. In a bowl, combine the whey with the oatmeal, the erythritol with stevia, the vitafiber powder,the baking powder and the vanilla bean powder.
  2. Add the almond butter, the applesauce and the egg white and mix just until incorporated. You should get a sticky dough.
  3. Transfer the mixture in a pastry bag on in a clean ziplock bag.
  4. Cut off the top and form 14 cookies on a tray lined up with baking paper.
  5. Decorate the cookies with some sliced almonds.
  6. Bake them in the preheated oven at 180 degrees Celcius for 9-10 minutes. Don't bake them for more than 10 minutes because you will get drier cookies.
  7. Place the cookies on cooling rack and let them cool completely or just serve them warm. I obtained 14 pieces which weighted together 210g, therefore one cookie has approximately 15g.

*An example of sweetener which uses a combination of erythritol and stevia is Truvia. You could replace the erythritol with stevia with xylitol.
