Yes, I know, sometimes life gives us lemons and we have no trace of desire to make lemonade or anything else really. There are days when we feel like we are pressured from all directions and we still have to cook, clean and pretend that we’re happy, fulfilled and full of energy, because we do not want to be judged. We think that everyone has a life and each person does all these things and why should we be the ones who have start to complain.
Well, believe me my words when I say that not everyone is doing the things listed above. Some just step over the clothes, ignore the dust and eat out and they are very happy. Do not get me wrong, I do not judge anyone, on the contrary, I think I’m jealous. Sometimes I want to be more careless and I want to stick my perfectionism somewhere, in a dark place, away from the daylight.
Because I care about my health (and I can not stand hunger: D), no matter how busy I am, sometimes I have to cook. In those days I like to make muffins, because I can prepare them rather quickly, they are nourishing and are easily transportable. The recipe that I’m going to share today is special because it is the first in which I used the organic teff flour from Myprotein. I did not know what to expect and if I wll like the finished product, but I was pleasantly surprised.
If you like sweet snacks that keep hunger away and when transported don’t become a mass with irregular shape, these muffins are for you! ?
These healthy muffins do not contain not even a gram of added sugar, they are delicious and you’ll only invest 40 minutes in total to make them. Awesome, right? 😀
- 100 g teff flour (I used Myprotein)
- 100 g brown rice flour
- 60 g erythritol with stevia
- 1 tsp konjac glucomannan powder
- 1/2 tsp baking powder
- 1/4 tsp vanilla bean powder
- 1/4 tsp salt
- 100 ml buttermilk 3.5%
- 2 large eggs
- 2 large egg whites
- 5 ml coconut oil
- 10 drops vanilla flavdrops (Myprotein)
- 30 g raisins
- 18 g raisins
- 12 g sugar free chocolate chips
- Combine all the dry ingredients in a bowl.
- Add the buttermilk , eggs, egg whites , coconut and the flavdrops and mix until smooth. Add the raisins and incorporate them with a spatula.
- Pour the mixture evenly in 6 muffin moulds and decorate each muffin with raisins and chocolate chips. Bake for 25-30 minutes in the preheated oven at 180 degrees Celsius.
- Transfer on a cooling rack and let them cool completely or serve warm.
