Raw Vegan Bars with Walnuts and Dates (sugar free, vegan, 100% healthy)

How often are you craving for something sweet when you are not home and you’re just tempted to buy unhealthy foods? And have you ever wondered why these situations occur?

If I would have got a dollar for any of my attempts to just go and buy something crappy, because I was too hungry, I am sure that I would have had until now a KitchenAid mixer. 🙂

To avoid buying some sweets that contain many empty calories and will not benefit our body, I suggest you try and make these nutritious bars with nuts and dates. Cause girl, you know it’s a good choice. 😀

Etape
  1. Put the dates in a bowl , pour approximately the 300ml of hot water and let them rehydrate for 4 hours . If you use a wide bowl you'll need more water , because the water must cover the dates completely. I recommend using a narrower bowl so that the water in which the dates are soaking is more concentrated in the end .
  2. After the 4 hours of hydration , remove the dates from the bowl, apply very little pressure to remove the excess water and put them in a blender . Preserve 200ml of the water in which the dates rehydrated, because we're gonna need it later for the bars.
  3. Add the walnuts to the dates and blend everything until a thick paste in formed.
  4. In a bowl , mix the coconut flour with the oat flour, the psyllium husk and add the paste obtained earlier. Knead the mixture with your hands as quickly as possible, because the psyllium husk dissolves very quickly and we don't want psyllium lumps in our bars. Add water and the erythritol and knead again until a homogeneous batter is formed.
  5. Transfer the batter in a silicon square mold, with the diameter of 20cm, an flatten it evenly. Cover with plastic wrap and refrigerate overnight.
  6. Slice the next day and serve. Store covered in the fridge. Enjoy!
