When outside is starting to get cool, my house starts to smell like cinnamon. I feel the need to cook nourishing and very flavourful sweets, because I find it comforting to sit next to the oven when it is raining or snowing.
Though lately I had a pretty busy and chaotic schedule, I decided to postpone everything and make a cake. I wanted a rich dessert, so I decided to use almond flour and walnut flour. I’m glad that sometimes I detach myself from everything and I cook, because when I feel that my house is filled with sweet flavours, I know that the day has not passed in vain.
If you’re looking for an extremely fluffy cake, then this is not for you. Do not worry, I’ll try to make a recipe for fluffy a version, because I still have apples and cinnamon. 😀
- 180 g almond flour/meal
- 40 g walnut flour
- 80 g erythritol with stevia
- 1 tsp cinnamon
- 4 large egg whites (154g)
- 4 large egg yolks (60g)
- 330 g grated apples
