Vanilla Almond High-Protein Cookies (sugar free, gluten free, 100% healthy)

I love protein snacks and protein bars are my favorite. Because the bars are pretty expensive and we should have a diversified diet, I’m constantly trying to develop recipes with a high protein content.

This time I decided to make protein cookies, but it was easier said than done. Not all my recipes turn out to be successful from the first trial and now I have evidence! ?

Although the development of original recipes is sometimes a challenge , I love creating new healthy sweets. Recently I filled my pantry with products from MYPROTEIN and I decided to use them. I wanted to make some cookies using whey protein powder because it is simply de-li-cious. Every time I drink a protein shake with skimmed milk, I feel like I’m drinking a milkshake with ice cream and whole milk.

To prepare these cookies I used the Impact Whey Protein with Natural Vanilla flavor and a little bit of VitaFiber Powder.

VitaFiber is a soluble fiber derived from non-genetically modified corn starch. VitaFiber a Isomalto – oligosaccharide containing 91 % dietary fiber and it can be added to increase the daily intake of fiber. With zero sugar and zero fat, this powder has a very pleasant sweet and natural taste. It seems to me that VitaFiber naturally has a very subtle raspberry flavor, but do not rely on my olfactory senses. ?

This wonderful fiber helped me to get a proper cookie batter and stop wasting the protein powder. I tried to make twice high-protein cookies twice with chocolate protein powder without using VitaFiber and failed.

After realizing that I nearly run out of chocolate-flavored protein powder, I reached for the bag of the vanilla one. I decided to add almond butter because I wanted to add an optimum amount of healthy fats. The almond butter from MYPROTEIN is made ​​without added sugar, oil and salt and it’s a wonderful source of protein and poly and monounsaturated fats.

Summing up, I tried making healthy, nutritious and delicious cookies and I think that I have managed to do that. 🙂

  1. In a bowl, combine the whey with the oatmeal, the erythritol with stevia, the vitafiber powder,the baking powder and the vanilla bean powder.
  2. Add the almond butter, the applesauce and the egg white and mix just until incorporated. You should get a sticky dough.
  3. Transfer the mixture in a pastry bag on in a clean ziplock bag.
  4. Cut off the top and form 14 cookies on a tray lined up with baking paper.
  5. Decorate the cookies with some sliced almonds.
  6. Bake them in the preheated oven at 180 degrees Celcius for 9-10 minutes. Don't bake them for more than 10 minutes because you will get drier cookies.
  7. Place the cookies on cooling rack and let them cool completely or just serve them warm. I obtained 14 pieces which weighted together 210g, therefore one cookie has approximately 15g.

*An example of sweetener which uses a combination of erythritol and stevia is Truvia. You could replace the erythritol with stevia with xylitol.
