No Bake Protein Bars (sugar free, gluten free, 100% healthy)

My love for chocolate is not a secret, but I don’t think that I have mentioned before that I like protein bars just as much. I would always always eat a sugar free protein bar or two rows of chocolate, because these are my favorite sweets!

If I have protein bars in the house, I will eat at least two in one day because I can’t help it, but they are not exactly cheap.

I managed to make before no bake protein bars using rice protein but I didn’t like neither the taste, nor the flavor, this is why I decided that I will try to make some using whey protein. Easier said than done.

I tried to make them and I failed so many times that I stopped counting the failures. Every time the batter was too sticky and it refused to keep it’s rectangular shape. I tried to bind the mixture using psyllium husk, but I never succeed in incorporating a larger amount of protein powder.

When I first saw that MYPROTEIN is selling VitaFiber powder, I felt a joy that exceeded the one that I’ve felt when I realized for the first time that I have something to put my bra on. 😀

VitaFiber is a highly soluble dietary fibre derived from non-genetically modified corn starch. VitaFiber, an isomalto-oligosaccharide, contains 91% dietary fibre and so is a great way for anyone looking to increase their daily fibre intake.

Of course, I ordered the protein powder, the VitaFiber powder and everything else that I needed. The order arrived. I tried to make again the protein bars and I failed again. Why? Because I used too much liquid. The second attempt was more successful, but I figured out that I have to lower the quantity of liquids even more.

At last, I can present you the final and improved version of this recipe and I honestly can say that it’s been a long time since I’ve been so happy. I have realized that 10ml can make a difference and that one should not give up when there is at least a tiny probability of succeeding. This recipe is my pride and I was eager to share it with you!

  1. In a bowl, combine the whey protein powder with the VitaFiber powder and the chocolate nut flavouring from MYPROTEIN.
  2. Add the almond butter and the skimmed milk.
  3. Knead the mixture until it's bound, dense and homogenous. You will be tempted to add more milk, but believe me there is no need to do this. Continue to knead and you will see that it will come together. If you will add more liquid, the bars will turn out too soft and sticky.
  4. Transfer the mixture into a 20cm square mould (I used a silicone one). Use your hands to level the batter. You could also use a glass or any other object with a flat bottom.
  5. Put the mould in the refrigerator and leave it there for 4-5 hours. You could also put it in the freezer for 40 minutes to speed up the hardening process.
  6. Release the batter from the mould,place it on a cutting board and cut it into 10 equal bars. I recommend wrapping the bars individually for an easier serving and storing. You can make a bigger batch and freeze them and they will taste just as good as the freshly made ones.
