Healthy Vanilla Protein Cheesecake (sugar free, low-fat)

My relationship with the cheesecake is very interesting, because sometimes I wake up with a crazy craving for cheesecake and sometimes it can sit untouched for days in my fridge .

Because I haven’t made ​​one in a while and I had quite a bit of cheese, I decided to make a simple vanilla cheesecake. To avoid the cracks I decided to cook it in a water bath. This technique involves placing and keeping the pan halfway in boiling water during baking so the temperature is evenly distributed and the cheesecake comes out creamy.

I think this is the tastiest and the most beautiful cheesecake that I’ve ever made, because I couldn’t stop saying ” Oohh ” and ” aaahh ” while I was eating. 🙂

It is so creamy, full of flavor and … it is simply too good to be described. I wish I could give you a slice to make you understand what I mean.

This cheesecake will melt in your mouth and you will remain with chocolate flavored crispy walnut pieces. Sounds good, right?

In addition to being downright savory, a slice of this cheesecake has a protein content equivalent to that of a protein bar! This dessert is nutritionally balanced and it’s actually beneficial for our health. Only one serving will help you increase you’re daily consumption of calcium and protein, which are essential in maintaining your bone health and muscle growth.

For those who follow the Dukan diet, the protein powder can be replaced with skimmed powdered milk. The walnuts should be omitted and I strongly suggest you add some vanilla bean powder. This cheesecake can be consumed starting with the cruise stage.

The Walden Farms chocolate syrup is a real miracle, because it has no calories! Yes, you heard me right, it has 0kcal and, at least for me, it successfully replaces the classic chocolate syrup. It has a nice flavor, it’s sweet and it’s good for decorating.

This cheesecake has everything you could want in a desert: flavor, taste and texture!

  1. Blend the cottage cheese until it becomes creamy. Add the rest of the ingredients and mix everything for 3-4 minutes or until homogenization.
  2. Cover a cm cheesecake pan with removable bottom with aluminum foil and pour in the cheesecake mix. Place the pan into a bigger tray and fill the tray with hot water until it reaches the middle of the cheesecake pan.
  3. Bake the cheesecake for an hour in the preheated oven at 150 degrees Celsius. Periodically check your cheesecake.
  4. Let the cheesecake cool in the pan. After your cheesecake cooled completely, cover it with plastic wrap and let it sit in the fridge for 8 hours or best overnight.
  5. For an easier release, run a knife between the cheesecake and the pan. Pour the chocolate syrup in a piping bag or in a clean plastic bag, make a very small cut and decorate your cheesecake. Decorate the margins with some baked walnuts, cut the cheesecake and you're done!
  6. If you want your cheesecake to look flawless, you can decorate separately each slice.
  7. Enjoy!
