Healthy Chocolate Croissants (Sugar Free, Low Fat, Whole Grain)

I think that those who follow my activity already know that I’m trying to avoid the products with white flour and consume as little gluten as possible in general. However, sometimes a „want” hits me and I realise that I eat as clean as possible and in reasonable quantities, I regularly exercise and I have one life only, which means that sometimes I can cross the continuous line and go in the overcoming. : D

Sure, there are people who take are on a low-carb diet, so all of the products that contain flour are removed from the landscape, but it is not my case.

I’ll be 100% honest and tell you that I chose to use spelt flour for convenience, because it contains gluten, and I knew that I would get a decent and elastic dough. Of course, I’m not gonna stop until I’ll find the combination for the perfect gluten-free dough, but this time I really wanted croissants!

Spelt flour is healthier than wheat flour and to feel a little better I added a little bit of coconut flour. : D

This recipe is special for me because I had the opportunity to try new products from Damhert. I also managed to make my first video (YAY), but not a perfect one. I thought about not making it public because it was made just as a form of test, but I thought it would help you much as far as the instructions are concerned. All that being said, I hope you’ll find the video useful and I assure you that the following will be more successful. I chose to fill these croissants with some chocolate spread with Tagatesse from Damhert and I can tell you they were turned out delicious. They’re fluffy, flavorful and nourishing, and the spread is exactly like Nutella. No, I’m not kidding, and now that I think about it I can say that it’s even better.

Etape
  1. Put the yeast in the warm milk, mix everything and let the mixture stand. We do this to activate the yeast.
  2. Combine 320g of spelt flour with the coconut flour and the sweetener. Add gradually the eggs and the egg white and knead everything until incorporation.
  3. Gradually add the milk and yeast mixture. Add the remaining 80g of spelt flour and knead the dough for 10 minutes.
  4. Transfer the dough into a bowl greased with coconut oil, cover it with plastic wrap and let it rise in a warm place for 30 minutes.
  5. Overturn the dough on a working surface and cut it in 8 equal pieces. brush each piece with coconut oil and form 8 balls.
  6. Stretch each ball with a rolling pin to form a circle. Place the stretched dough on a piece of plastic wrap and coat it with coconut oil. Stretch the second piece of dough and place it over the first. Do not forget to put a coat of coconut oil between all sheets, because we want to obtain a layered dough.
  7. Grease the working surface with coconut oil and overturn the layered dough. Stretch it into a circle with a thickness of 3-4mm.
  8. Cut the circle into 16 triangles.
  9. Place 10g of chocolate spread on each triangle and roll them to obtain 16 croissants. I recommend chilling the spread before using because it will be easier to work with.
  10. Place the croissant on a tray lined with baking paper. Let them rise for 20 minutes in a warm place.
  11. Bake them in a preheated oven at 180 degrees Celsius for 35-45 minutes or until golden brown.
  12. Transfer them on a cooling rack and let them cool a little. Powder with some powdered erythritol with stevia and serve. They are good both warm and cold.
