I think that those who follow my activity already know that I’m trying to avoid the products with white flour and consume as little gluten as possible in general. However, sometimes a “want” hits me and I realise that I eat as clean as possible and in reasonable quantities, I regularly exercise and I have one life only, which means that sometimes I can cross the continuous line and go in the overcoming. : D
Sure, there are people who take are on a low-carb diet, so all of the products that contain flour are removed from the landscape, but it is not my case.
I’ll be 100% honest and tell you that I chose to use spelt flour for convenience, because it contains gluten, and I knew that I would get a decent and elastic dough. Of course, I’m not gonna stop until I’ll find the combination for the perfect gluten-free dough, but this time I really wanted croissants!
Spelt flour is healthier than wheat flour and to feel a little better I added a little bit of coconut flour. : D
This recipe is special for me because I had the opportunity to try new products from Damhert. I also managed to make my first video (YAY), but not a perfect one. I thought about not making it public because it was made just as a form of test, but I thought it would help you much as far as the instructions are concerned. I chose to fill these croissants with some chocolate spread with Tagatesse from Damhert and I can tell you they were turned out delicious. They’re fluffy, flavorful and nourishing, and the spread is exactly like Nutella. No, I’m not kidding, and now that I think about it I can say that it’s even better.
One croissant has 197kcal, 8.1g of fat, 24.8g of carbohydrates and 6.6g of protein!
