Apple Tart with Vanilla Custard Filling (sugar free, low fat, 100% healthy)

I do not know if you’ve missed me, but I was out of the country for two weeks. I wanted to detach, to relax and to travel, but I did not expect that I will miss cooking and writing so much. Do you want to know where I was, huh? ?

The city that I visited was Barcelona but I stayed in Castelldefels, a beautiful village in the province of Barcelona in Catalonia community. Honestly, this town will stay in my heart forever, because the beach, the quietness, the cleanliness and variety of products have conquered me irreversibly. ♥

I passed by countless bakeries and pastry shops and the sweets that I have seen in the windows fascinated me. The pastry shop next to the hotel where we (me and my boyfriend) stayed, had a variety of tarts (with butter and sugar) and I could only imagine the day when I’ll get home I’ll cook a 100% healthy tart!

Because I always have a sweet tooth and a child’s soul, Tatiana (me) has made an apple tart with vanilla custard. ?

This tart was worth waiting for, because it’s delicious! I do not know who’s to blame, my sweet tooth or the marvelous taste, but half of tart disappeared and was later found in my stomach. ?

This tart is light, healthy, very tasty and the vanilla custard is so flavorful and refreshing, that I can hardly stop myself from eating the rest of the tart too. ?

To make my life easier I use a rectangular tart pan with removable bottom. Mine has 36cm in length and 13cm in width and you can find it here, but it is not the cheapest pan on the market I must say. I don’t know if this particular pan is sold anywhere else, but I recommend you to try and find it cheaper on another website.

Crust
  1. Combine the oat flour with the brown rice flour, the konjac glucomannan powder, the salt and the vanilla bean powder.
  2. Add the egg, the vanilla extract and the egg whites and start combining the ingredients until a dough is formed. You can do it by hand or in a mixer using the hook attachment. The resulted dough will be wet, but don't worry, it's totally normal. Cover the dough with plastic wrap and freeze for 20 minutes.
Vanilla Custard
  1. Bring the milk to a simmer. It shouldn't boil.
  2. Beat the egg yolk with the erythritol with stevia and the vanilla bean powder until they lightened and tripled in volume.
  3. Add the corn starch and mix everything until combined. Pour 1/3 of your hot milk and mix fast until incorporated. Pour the rest of the milk mix again until you have a liquid and even mixture.
  4. Transfer the custard back in the pot and cook it over medium/low heat, stirring constantly with a whisk or a silicone spatula, until the custard thickened considerably. You can also tell that the custard is cooked when it has no longer a starchy and floury taste. The cooking process lasts approximately 5 minutes.
  5. Cover the custard with plastic wrap and set it aside. The wrap should touch directly the custard to prevent the formation of a film on the surface of the custard.
  6. Take out the dough from the freezer. Dust your working surface with some brown rice flour, remove the plastic wrap and place the dough on the floured surface. To make the rolling process easier, sprinkle some brown rice flour on the dough.
  7. Roll your dough until you have a 0.3cm thick crust. Sprinkle again some rice flour to prevent the dough from sticking to the pan and transfer it to the tart pan. Press the crust with your fingers and remove the excess. It you find some cracks in the crust, simply take some of the extra dough and cover the cracks. I used a rectangular tart pan with 36cm in length and 13cm in width.
  8. Bake the crust in the preheated oven at 180 degrees Celsius for 10 minutes. Set it aside and let it cool for another 10 minutes.
  9. Slice the apples as thin as possible.
  10. Pour evenly the vanilla custard and place the apples in a desired pattern. Bake the tart in the preheated oven at 180 degrees Celsius for 25-30 minutes or until the crust is golden and the apples have softened.
  11. Take out the tart from the oven, brush the apples with some apricot jam and dust them with a little bit of vanilla bean powder. Let the tart cool completely in the pan and after brush the apples again with some apricot jam.
  12. You can serve it immediately but, for an easier portioning and slicing, I recommend putting it in the fridge overnight.
